I was experimenting on sweet potatoes due to my gestational diabetes and came up with this recipe
1 cup flour
1 cup rice flour
1 sweet potato
1/3 cup brown sugar
1 tsp vanilla extract
Pinch of cinnamon
And 5 tbls white sugar
2 cups of oil
1/4 cup sugar
2 tbls cinnamon
Mix together and roll cooked fritters

Cathy's Shepherds Pie
My version of Shepherds Pie
5-6 potatoes
1 stick of butter
1/4 cup milk
1lb ground beef
1 cup slice mushroom
1 medium onion sliced
1 celery sliced
2 carrots
2 cloves of garlic minced
1 cup shredded cheese
2 sprigs of rosemary
1 sprig of thyme
1 tsp of knorr bouillon
Salt and pepper and garlic powder to taste
Boil potato and mash with butter, milk, salt and pepper
Sauté onion,garlic, mushroom
Than add celery and carrots add salt and pepper
Cook till tender than set aside on the same pan brown ground beef add salt, pepper, and garlic powder than add sauted veggies.
Add Rosemary and thyme
Mix together than add chicken bouillon
Preheat oven to 425*
Put meat and veggie mix in a baking dish and spread accordingly. Add mash potato and score with fork than add shredded cheese. Cook till brown and serve.

Momma Marys Mexican lasagna
Mexican lasagna

1 medium onion
2 cloves of garlic
2 cans of refried beans
1 jar of salsa
Pinch of oregano, salt, pepper, cayenne pepper
1 bag medium tortilla cut into 4 triangles
1 tub sour cream
1 tub cottage cheese
1.5 bag of Mexican shredded cheese
1 can of green enchilada sauce
Brown onion, garlic, ground beef... Drain add salsa and refried beans cooked till all blended...add salt, pepper, cayenne pepper, oregano
Heat oven 350, grease baking dish line bottom with cut tortilla add half beef mixture add cheese and cottage cheese and chopped tomato add another layer of tortilla meat mixture cottage cheese tortilla add sauce like enchilada sauce ontop than top with shredded cheese.
Cook till cheese is melted and serve....

Happy Late Easter
Ok I'm back home now and I have yet to post some of the foods I've encountered in San Diego. Honestly, I've just been really lazy. I will post one of these days and show all the yummy things I've eaten or made. But for now I've come to a concluding halt. I'm gonna go on a diet and see if it works. So for now I will be posting to see how I've been doing. I haven't started today but I've been cutting the intakes of foods I eat. Lately it's been a little bad cuz I've been craving things with fat and salt. The worst combination ever. So today I've been trying to flush my system by drinking lots of water and tea. I made a gallon of lipton tea last night so I should be good for the next day or two, that's if my husband don't get to it first. So wish me luck. I'd like to lose hmmm...more than I count on my fingers that's for sure....

Hot and Spicy Love
Happy Late Love Day.
I love valentines day because it's a day of love. The love of your lover, the love of your friends, the love of family, and the love of God. We didn't do much for Valentines day. My husband got me a plant, I was super excited because I've been wanting one in our apartment. Gives the meaning of life you know. I love flowers but plants last longer. We celebrated our valentines with one of my husbands closest friend and his girlfriend and watched a movie...nothing romantic...I guess it could be in it's own way because the guy showed love for his family. The movie was called Mirrors....scary but loved it. I also found this picture and if you know me you'll laugh because this is what I do with my lips... Natural habit. I used this as my screen saver on my computer and it makes me smile every time I see it. I need to print it and frame it and put it somewhere. For some reason I am attracted to things that have hearts and things that are kissing. I guess I'm a sucker for love.
Anyway back to what I cooked. I didn't know what to call it but Hot and Spicy hehehehe
I used chorizo sausage, potatoes, jalapenos, onion and garlic, salt and pepper to taste. I cut the chorizo sausage into bite size pieces and browned them. Than I sauteed the onion, potatoes, and jalapeno. Than mixed it with the chorizo.... It was yummy but spicy.

Spicy Pork Curry
Curry....I love curry, from Indian food, Thai, Japanese, the more spice used the better. I wanted to try something other than chicken for curry or even beef so I used pork. It was really easy to do and it turned out really good.
Ingredients
1 Tomato chopped
1 Celery chopped
1 Onion chopped
2 Cloves of Garlic minced
2 Bay Leaf
2-4 pieces of Pork (ribs with no bones)
2 tbs Curry powder
1 tbs paprika
pinch of salt
1 jalapeno minced
I sauteed the garlic and onion together till fragrant. Than I added the chopped celery, tomato, and jalapeno. Than I added the pork, curry, paprika, and salt.
I cooked the pork till white in color and the juice have come out. I added about half a cup of water and the 2 bay leaf.
I added a little bit more salt to taste and let it boil till the sauce is reduced.
Serve over rice....
